Nicknamed “the pharaoh’s wheat,” farro was once a dietary staple in Egypt and Rome. It is made from heirloom wheat varieties like einkorn, emmer, and spelt. While not gluten-free, farro contains less gluten than modern wheat and may be easier to digest for those with mild sensitivities.
