Organic evaporated cane juice (ECJ) is an alternative to refined and raw sugar. It is produced by a single-step crystallization process which means the cane is harvested, the juice is extracted, field impurities are removed, it is crystallized, and maintains the integrity of the sucrose molecule. It does not undergo the same degree of processing that refined sugar does; therefore, some argue, that evaporated cane juice retains more of the nutrients found in sugar cane.
